České palačinky: co jsou, jak je připravit a čím se liší od lívanců

Tohle je about the more recognisable flat pancake or crepe. Czech palačinky resemble classic French crepes or Austrian Palatschinken. Palačinky are created by spreading smooth batter in a thin layer on a round-shaped pan, and then frying it on both sides until slightly brown. Fried pancakes are then variously filled, rolled up, or folded, and served.

The thing is that you rarely get just a pancake. The one I’m going to talk about is on the dessert menu of 90% of restaurants in Prague. My family loves Palačinky, and I'm sure other Czechs do too! The basic batter for Palačinky is neutral in flavor, as it doesn't contain any sugar.

In its basic form it’s a folded pancake with a cup of ice-cream and some tinned fruit on the inside. The outside should have some sugar dusting and maybe a dribble of chocolate sauce.

Co je palačinka a jak se v češtině používá tento pojem

To the Czech mind, the word “pancake” can be translated one of three ways: Lívance, or yeasted pancake, or palačinka, meaning, well, pancake. There's also bramborák, a potato pancake.

Lívance are a type of Czech pancake similar to their airy American-style cousins. Lívance are small, fluffy pancakes, where the rise is created by yeast, rather than baking soda or baking powder. Traditionally, lívance are cooked in their own frying pan (you may recognize it, a strange shallow frying pan with four circle-shaped wells in it).

Palačinky most resemble crepes, the large thin circles that many of us think of when we hear the word “pancake”. There’s no raising agent required, and the batter is simple and quick to make. The Czech version is usually made from wheat flour, milk, and eggs and served filled with jam or quark cheese and topped with confectioner's sugar or whipped cream.

Bramboráčky These are potato pancakes that are shallow-fried in oil. They are made from grated potatoes, flavoured with garlic and bound together with egg and flour. The bramborák is a staple of Czech cuisine and is often served as an accompaniment to guláš. This is real Czech street food, often found at festivals and market stalls around the country. It’s hot, greasy, and satisfying.

Kde se palačinky v Česku objevují

You’ll find it on most dessert menus but it doesn’t have to be just a dessert.

If you want savoury pancakes then look out for something called a “creperie”.

It was a little cafe in the Bohemian Switzerland area of the country and this was my pre-climb energy booster.

Traditionally pancakes were eaten on the last Tuesday before Lent, as it was the final chance to enjoy a bit of indulgence before beginning into forty days of fasting and abstinence.

Pancake recipes are pretty simple - usually just eggs, flour and milk - and so in our age of abundant food, it seems almost laughable that in a more puritan past, these basic ingredients were seen as luxuries, and therefore out of bounds for Lent. Still, for many people, pancakes maintain the mystique associated with forbidden food. There’s also a sense of occasion in having an annually appointed day just for pancakes. But perhaps most of all, it’s the childhood thrill of tossing pancakes - seeing the golden disc rise from the pan, slowly turn in mid-air, and land (almost always) successfully back in the pan - that gives pancakes their magic.

In the UK, many children simply know the day as Pancake Tuesday, although its more formal moniker is Shrove Tuesday or Shrovetide. In fact, it was in Britain where sweet pancakes made from wheat flour were originally distributed to the poor on Shrovetide. In French-speaking countries, the day is famously known as Mardi Gras. In the Czech Republic, it’s known as Masopustni útery, while our German neighbors know it as Fastnachtdienstag. No matter what you call it, it's all about enjoying a sinful indulgence or two.

Jak se připravuje těsto na palačinky

How to make the palačinky batter correctly? You'll make the palačinky batter quickly by mixing all ingredients in a large bowl. I always grab a hand whisk, which whips everything perfectly and prevents lumps from forming. Another option is to use a blender and let it prepare a smooth palačinky batter without any effort. The resulting pancake batter should have a semi-fluid texture, be smooth, and free of lumps or other solid particles.

This recipe was developed in grams. In a bowl, whisk 2 medium eggs with 1 ¾ cups milk. Add 1 Tablespoon unsalted butter (melted) and ¼ teaspoon salt, then gradually whisk in 1 ½ cups all-purpose flour until you have a smooth, lump-free, semi-liquid batter.Set the batter aside and let it rest for at least 30 minutes.

Into a large bowl add 3 cups milk, a pinch of salt, 1 egg, 2 cups all purposeflour and 1 Tbsp melted unsalted butter.

Set aside and leave the batter to rest for at least 30 minutes. Let the batter rest for at least half an hour before frying the pancakes. Stir the batter in the bowl thoroughly each time before pouring it into the pan.

Jaký je nejlepší pánev a proč palačinky trhají

Which is the best pan for palačinky?Preferably use a special pancake pan. It has a non-stick surface and low beveled edges, so the palačinky don't stick and turn very well. The ideal pan size for frying Czech palačinky is around 10 inches (25 cm).

If you find that the palačinky tear too much when you flip them, it means only one thing - the batter is too thinned with milk and needs to be thickened with flour. Conversely, batter that is not spreading well needs to be thinned. Add a little milk to the bowl (about three tablespoons) and mix thoroughly.

Brush a non-stick pan with a small amount of sunflower oil; just a little is enough.

Grease the pan with a pastry brush dipped in vegetable oil. The fat will be evenly distributed everywhere, and the pancakes will fry well.

STEP 2: Brush a non-stick pan with the oil. Place the pan on the stove over medium heat.

Place the pan on the stove over medium heat and allow it to heat up sufficiently.

STEP 3: Remove the pan from the stove. Pour in some of the rested batter with a ladle. Let it spread evenly over the entire surface of the pan with a circular motion of the hand. Tip: The amount of batter necessary for one palačinka will depend on the size of the pan used. Then, return the pan to the stove.

Once the Palačinka is firm and can move when you shake the pan, carefully flip it.

Fry the palačinka on the second side until slightly golden. This side will cook faster, taking less than one minute.

Fry the Czech crepe on the second side until it turns slightly golden. This side will cook faster, taking less than one minute.

When air pockets appear, check underneath the crepe with a spatula tosee when it browns. It will take about a minute on high heat and when it isgolden brown it is ready to flip. Flip the crepe with the spatula and shake thepan to remove any wrinkles that can sometimes be caused by flipping.

Jak palačinky podávat

Place the fried palačinky on a plate, spread with jam, roll up and sprinkle with icing sugar.

Strawberry Crepe:Spread your jam of choice (the most common is strawberry) as a 2 inch (5 cm)wide strip from the top of the crepe to the bottom. Now from either the leftor right side, roll up the crepe and set on another plate.

Chocolate Crepe:Sprinkle sweet cocoa powder on the entire crepe and add chopped walnuts. Then fold the whole crepe in half and then fold it in half again so it is nowa quarter of its original size.

So on the inside it was a double scoop of vanilla ice-cream and the tinned fruit was peach but they also added grapes and because it was August there was a sprinkling of blueberries and raspberries from the forest.
